Chia Seed Power Bites - West + Rose

Chia Seed Power Bites



 
I see a lot of recipes for energy bites on the interwebz.  They all vary from each other in slight ways, but in general include a nut butter and oats.  I grew up eating a version that included peanut butter, wheat germ, honey, sunflower seeds all rolled together and then rolled in powdered milk.  They were so delicious. This weekend, I raided my cabinets to see what I had on hand to make similar power bites.  Bubba was right there to lend a helping hand.
 
Chia Seed Power Bites
1 & 1/3 C of Rolled Oats
1/2 C Peanut Butter
1/4 C Honey
2 T Chia Seeds
1/2 t Cinnamon
1/2 t Pure Vanilla Extract
1/2 C Dried Cranberries (I used Ocean Spray 50% less sugar)
 
1. Combine all ingredients except the dried cranberries.  This part will require some arm stamina, getting everything really well combined is a bit of a task, but worth it.
 
 
2. Then add in the dried cranberries, ensuring they are distributed throughout the mix.
 
 
3. I used a melon baller to equally portion out the bites, I used my hands to create perfect balls before placing the bites between pieces of parchment paper.
 
 
4. Store in fridge for up to 4 days.
 
 
Bubba loved making these and loved eating them on the day we made them...have not been able to get him to try them since...Not exactly sure why...but he absolutely loved them on day one...so these are kind of Bubba approved...kind of...I liked them better after they sat in the fridge for a day...These are delicious and convenient for an on the go breakfast.  A few of these can fuel you through lunch!

  3. I make granola bars very similar to this that we just grab for a quick post-workout snack!! Great idea with the chai seeds!
