Broccoli & Apple Salad

Hubs and I are always trying to come up with healthier alternatives to our favorite recipes.  One of my favorite dishes from family get-togethers is the broccoli salad.  I love the ones full of bacon and cheese, but Lord knows that is not going to be healthy.  So here is my adaptation of a broccoli salad with not near as many calories, but still super flavorful and filling.

This would be a refreshing salad to serve at Thanksgiving a midst all the heavy casseroles, turkey and gravy.

Salad Ingredients
4 C fresh broccoli florets (2 Large Heads, leaving minimal stems on the florets)
2 Large Golden Delicious Apples, diced
1/4 C Red onion
1/2 C Roasted, unsalted Pecan pieces, chopped (I get mine at Trader Joe's)
1/2 C Lower sugar, dried cranberries

Go ahead and toss these ingredients around prior to pouring the dressing on them.
Dressing Ingredients
1/4 C Low fat plain greek yogurt
1/4 C Mayo
Zest of one lemon
Juice of 1 Lemon
1 T Splenda (Sugar, honey or other sugar sub is fine too)
1/8 t Salt
 Black pepper to taste

Mix all dressing ingredients together until well blended.  Pour over salad and toss to coat.  Let sit in fridge overnight.

This is a very satisfying salad for lunch or even as a side for supper.  It is slightly dry, in efforts to keep this salad low in calories, but still extremely flavorful.  I would recommend doubling the dressing and only toss salad with half of that, but have extra in case you want it a little extra saucy. This salad lasts really well for about 3 days.  I made this on a Sunday and by that Wednesday it was starting to turn bitter.

  3. I'm not a huge broccoli fan, but this salad sounds right up my alley! I love apples in a salad, they give everything a nice sweet crunch!

  4. Love me a good broccoli salad. This one sounds amazing. I would even sub vegenaise for the mayonnaise. 1/3 of the calories and fat. Cheers!!

  9. My husband's grandma makes a similar dish but without the apples. I bet the apples give it a great crunch!
